The Max Rubner Institute is the federal government’s research and advisory institution in the field of nutrition and food. Approximately 700 employees work at four locations in Germany. Among them are 200 scientists who conduct research at five institutes and two centers—collaborating both internally and externally—to provide policy advice and serve the public good.
The scope of duties at the Institute for Animal-Based Foods at the Kulmbach location includes the classification and determination of the commercial value of carcasses. Your future responsibilities will include teaching in commercial grading courses, participating in national and international comparative grading exercises and EU inspection visits, planning, conducting, and evaluating research projects on slaughter value, as well as performing technical acceptance testing for the approval of grading equipment. The scope of responsibilities includes providing technical support for sampling and recording qualitative and quantitative reference values used to calculate national estimation formulas for classification procedures in slaughterhouses and for the cutting of carcasses. Your responsibilities will also include the independent collection and preliminary evaluation of experimental data using standard software applications, as well as the documentation of the measured data. A prerequisite for the permanent assignment of these duties is successful completion of an internal training and qualification program lasting approximately two years. Upon commencement of the qualification program, you will be assigned to work full-time in the area of carcass classification and market value determination.
What you bring to the table:
A completed bachelor’s degree or a comparable degree in food technology or a related field, or completed vocational training as a state-certified meat technician (f/m/d) or a comparable qualification, or a completed master craftsman’s training in the butchery trade (f/m/d)
Willingness to participate with dedication and motivation in the planned training and
qualification program and to successfully complete it
Willingness to perform regular field assignments at slaughterhouses and cutting plants
Willingness to undertake business trips lasting several days
Valid driver’s license and willingness to drive company vehicles
Good health and physical fitness to work in slaughterhouses
Excellent verbal and written communication skills in German
Desirable qualifications:
Knowledge or experience in determining the slaughter value of
carcasses and classification during the slaughter process
Knowledge or experience in the cutting of carcasses according to
standardized procedures
Experience dealing with regulatory authorities
Knowledge of market regulations pertaining to animal products
Experience conducting seminars and practical demonstrations
Good computer skills (MS Office, device-specific software)
Experience with data documentation, as well as knowledge of statistics

A full-time fixed-term position (39.00 hours/week, equivalent to 100% of a full-time position) starting as soon as possible and ending on December 31, 2028. Compensation in pay grade 9b, provided the personal requirements are met. Upon successful completion of the internal training and qualification program, compensation in pay grade 10 is planned.
